Chhole Recipe:

·        Take 300 grams of chickpea in a bowl and add water to soak them for at least 8-10 hrs or overnight.

·        Once soaked, move the soft and enlarged chickpea into a pressure cooker and add a quarter teaspoon of baking soda and salt along with 4 cups of water.

·        Ideally 6 whistles are enough to cook perfect chickpea.

·        In a separate pan, take 2 tablespoons of pure ghee and add 1 bay leaf, 1 tbsp cumin seeds and 2-3 pods of cardamom and saute them well on low heat.

·        Now add 2 finely chopped onions, 2 dry chilies and 1 tbsp ginger and garlic paste and saute them until the color darkens.

·        This is the time to add the star ingredient in the recipe, The Special Chhole Masala, about 2 tbsp.

·        Now add tomato puree (2pcs) to the pan and mix it well. Let the mixture cook well and you will observe oil being separated from the masala.

·        Finally, it’s the time to add our cooked chickpea in the delicious flavors along with a slight amount of chickpea water (to adjust the consistency)

·        Cover the pan and let it simmer for around 10-12 minutes.

·        Chhole Masala is ready to be served with freshly cut coriander and some white cream or butter.
